Mango and Coconut Yoghurt Bark

This yoghurt bark recipe makes a nice low-mess alternative to a bowl of yoghurt for self feeding babies! It also works with full fat vegan yoghurt, so you can easily modify it to be dairy free for allergy sufferers.

This yoghurt bark recipe makes a nice low-mess alternative to a bowl of yoghurt for self feeding babies! It also works with full fat vegan yoghurt, so you can easily modify it to be dairy free for allergy sufferers.

❄️Keeps in the freezer for up to 3 months

Ingredients

-1 tub of full fat yoghurt

-3-4 tbsp mango purée

-2 tbsp finely chopped mango pieces

-1 tbsp desiccated coconut

Method

 -Line a baking pan with greaseproof paper and pour the yoghurt on top, spreading it to the edges of the pan

-Swirl the mango purée through the yoghurt, then top with the mango chunks

-Sprinkle the yoghurt with the desiccated coconut

-Put in the freezer for at least 2 hours until the yoghurt has frozen solid, then break into chunks of yoghurt 'bark'

-Serve immediately out of the freezer and enjoy!
